Chicken Biriyani
Ingredients
- Chicken –1kg cut medium pieces
- Coconut oil – 3tbsp + ghee
- Ginger garlic paste – 2tbsp
- Onion - 3 cups , 1 large cut slice and fried the onion until it is brown.
- Spices - green cardamon– 5 ,cloves –3, cinnamon stick–1 inch broken, Bayleaf –1(optional)
- yogurt – 1\4 cup
- Turmeric powder– 1/2 tsp
- Chilly powder –1 tsp
- Coriander powder – 1 tsp
- Pepper powder – 1/2 tsp
- Garam masala powder– 1 tsp
- Salt – to taste
- Saffron – 1 pinch(optional)
Rice
14. Basmati Rice –2 cups (soaked in water for at least 15 minutes and then drained )
15. Spices – bay leaves –2 , cloves–6 , green cardamon–5, cinnamon stick –1 inch broken piece
16. Ghee –1 tbsp
17. Salt – to taste
18. add lemon juice - 1tbsp
To layer
19. Fried onions –1/2 cup
20. Ghee or oil –1 tbsp
21. Coriander leaves – 1/2 pinch
22. Mint leaves– 1/2 pinch
23. Cashew nuts
24. Raisins
Method
Step 1– Take a Kadai / heavy bottomed pan. Heat coconut oil +ghee, add spices and stir it for little seconds until fragrant. then add chicken pieces and salt.cook for 5 -6 minutes.add ginger garlic paste and salute well.cook for a few minutes till the raw smell disappears.add 1/4 cup yogurt, onion and spice powder salute it well.cook for few minutes oil separates
Step 2- Then add 1/4 cup of hot water, then cover and cook the chicken in a low flame.then check the taste for salt.add drained rice and cook until the rice 90% cooked.
Step 3– Take a heavy bottomed vessel.add 1 tbsp ghee and spread the cooked chicken and layered with hot cooked rice and top with ghee, fried onions, mint leaves and coriander leaves.cover it tightly with a flour /aluminum foil.Bake for 20 minutes in a high flame.Bring down the heat to the medium flame and cook for 10 minutes.turn off the flame and rest for 10minutes in the biriyani pot. Delicious biriyani ready toserve.....😍
